You can use Gecko Toolkit on a spare _x86_ Vista/7 machine to remove both the “disabled” message and the passcode. Then start cleaning out the previous owners data

So as I'm watching these videos, I've noticed how he'll stay away from updating older phones from the current IOS version, like in this video with the Ipod touch 2g, he was trying to unlock without updating to IOS 4, why might that be? My only guess would be because it may perform slower on an advanced IOS update, but could only imagine it would display that an Update is available later on in it's life given that it is able to run IOS 4

You should try redsn0w 0.9.2 for degrading the ipod then it will degrade properly.
